Oxtails are a staple of Jamaican cuisine and this recipe comes straight from my authentic Jamaican oxtail recipe. Everyone enjoys pizza, but adding the rich, delicious flavor of Jamaican oxtail as a topping creates an enticing combination!

Contrary to the name, the oxtail does not come from the tail of an ox. It is actually the tail that makes the meat beef.

Oxtail is a flavorful and gelatinous meat that is often used in soups, stews, and braised dishes due to its rich and flavorful flavor. It is prized for its tender meat and the rich, collagen-rich broth that results from slow cooking.

Homemade pizza dough or shop dough:

1. All-purpose flour is the finest option for making homemade pizza dough. Strain to remove any lumps.

2. Salt โ€“ Salt regulates the yeast and strengthens the gluten structure, which keeps the dough from falling apart.

3. Active dry yeast or instant dry yeast – both are easy to use for beginners. Yeast ensures that the pizza dough rises properly.

4. Crystallized white sugar โ€“ this may be an unexpected ingredient, but it makes the dough soft and tender.

5. Hot water โ€“ make sure the temperature is between 105 and 115ยฐF.

6. Olive oil โ€“ the oil gives a golden brown crust when the pizza is baked,

7. Oxtail Meat and Gravy โ€“ for this recipe we replace traditional pepperoni with oxtail for a delicious Jamaican island twist. Make sure you have about 1 dl of oxtail sauce as a base for the pizza.

9. Red onion โ€“ finely chopped.

10. Garnish with fresh herbs, such as parsley or cilantro.

How to make oxtail pizza

How to make pizza dough

1. Add the sifted flour, salt and yeast to a large mixing bowl or to an immersion blender with a whisk attachment. Mix on low speed until well combined. Test your yeast before making sure it is still alive if you are unsure. Then remove the whisk attachment and insert the dough hook.

2. Place the dough ball on a clean and lightly floured surface and knead until it forms a flexible dough ball that springs back quickly when pierced. Then put the dough in a large mixing bowl and drizzle over about 1 tablespoon of olive oil to completely cover the surface. Cover with a kitchen towel or shower cap and leave in a warm place for one hour or until the dough has doubled in size.

3. As the dough rises, prepare the toppings. After an hour or when it has doubled in volume, remove the dough from the bowl and stretch it to the desired size.

Assemble and bake the oxtail pizza

1. Heat the oven to 176ยฐC. Spread a layer of oxtail sauce on the prepared pizza crust, then add mozzarella, shredded oxtail and red onion. Brush the pizza base with olive oil and sprinkle with Italian herbs (optional).

2. Place in the oven and bake for 20 โ€“ 30 minutes or until the edges are lightly golden brown, the center is cooked through and the cheese is melted. Remove from the oven, slice, serve and enjoy!

ยง Oxtail โ€“ There are different ways to prepare oxtail, I recommend the boiling method. You can also order oxtails from your favorite Jamaican restaurant and bone them or use leftover oxtails.

1. Pizza Dough โ€“ Although I love the taste of freshly baked pizza dough, you can buy pre-made dough at the grocery store.

2. Garnish โ€“ Replace the cilantro with parsley or any fresh herb of your choice.

3. Cheese โ€“ Mozzarella cheese is a classic choice, but you can add ricotta or gruyere for an extra delicious pizza.

ยง Let the yeast rise before making your pizza dough. Make sure the yeast is active by mixing 1 teaspoon of sugar and 2ยผ teaspoons of yeast with ยผ cup of warm water. Let it rest for 10 minutes. When the mixture starts to bubble and gives off a pleasant yeasty smell, the yeast is ready to use.
